Ingredients:
- 2 (5 oz) cans of tuna in olive oil, drained (approx. 280g)
- ¼ cup (60g) mayonnaise
- 1 tablespoon (15g) Dijon mustard
- 1 tablespoon (15ml) fresh lemon juice
- 2 tablespoons (30g) finely chopped celery
- 2 tablespoons (30g) finely chopped red onion
- Salt, to taste
- Pepper, to taste
- 8 slices of wholegrain bread (or your choice of bread)
- Leafy lettuce (e.g., romaine or butterhead)
- Slices of tomato (optional)
- Slices of cucumber (optional)
Instructions:
- Open the cans of tuna and drain the liquid.
- In a mixing bowl, flake the tuna with a fork until it’s fine.
- Add mayonnaise, Dijon mustard, lemon juice, celery, and red onion to the bowl and mix well.
- Season with salt and pepper to taste.
- Lay out the bread slices on a clean working surface.
- Spread a generous portion of the tuna filling onto 4 slices of bread.
- Top with a layer of lettuce, tomato slices, and cucumber slices if desired.
- Place the remaining slices of bread on top.
- Cut each sandwich in half diagonally or as per preference.
- Arrange on a plate and serve.
