Ingredients:

  • 8 slices of day-old white bread (preferably thick-cut, about 200g)
  • 100g unsalted butter, softened (about ½ cup)
  • 100g raisins or sultanas (about ½ cup)
  • 4 large eggs
  • 500ml whole milk (about 2 cups)
  • 200ml double cream (about ¾ cup)
  • 100g caster sugar (about ½ cup)
  • 1 tablespoon vanilla extract
  • Zest of 1 lemon (optional)
  • Custard sauce or cream (optional for serving)

Instructions:

  1. Preheat your oven to 160°C (320°F).
  2. Butter the bread slices generously on one side and cut them into halves or quarters.
  3. Arrange half of the bread slices, buttered-side up, in a baking dish.
  4. Sprinkle half of the raisins evenly over the bread.
  5. Layer the remaining bread slices on top, then add the rest of the raisins.
  6. In a mixing bowl, whisk together the eggs, milk, cream, sugar, vanilla extract, and lemon zest (if using) until smooth.
  7. Pour the custard mixture over the bread, ensuring all pieces are soaked.
  8. Let it sit for 30 minutes to allow the bread to absorb the custard.
  9. Place the baking dish in a water bath for even baking (optional).
  10. Bake in the preheated oven for 40-45 minutes until golden and set. Check for doneness; a knife inserted should come out clean.
  11. Allow to cool slightly before serving, ideally with warm custard.
