Ingredients:
- 8 slices of day-old white bread (preferably thick-cut, about 200g)
- 100g unsalted butter, softened (about ½ cup)
- 100g raisins or sultanas (about ½ cup)
- 4 large eggs
- 500ml whole milk (about 2 cups)
- 200ml double cream (about ¾ cup)
- 100g caster sugar (about ½ cup)
- 1 tablespoon vanilla extract
- Zest of 1 lemon (optional)
- Custard sauce or cream (optional for serving)
Instructions:
- Preheat your oven to 160°C (320°F).
- Butter the bread slices generously on one side and cut them into halves or quarters.
- Arrange half of the bread slices, buttered-side up, in a baking dish.
- Sprinkle half of the raisins evenly over the bread.
- Layer the remaining bread slices on top, then add the rest of the raisins.
- In a mixing bowl, whisk together the eggs, milk, cream, sugar, vanilla extract, and lemon zest (if using) until smooth.
- Pour the custard mixture over the bread, ensuring all pieces are soaked.
- Let it sit for 30 minutes to allow the bread to absorb the custard.
- Place the baking dish in a water bath for even baking (optional).
- Bake in the preheated oven for 40-45 minutes until golden and set. Check for doneness; a knife inserted should come out clean.
- Allow to cool slightly before serving, ideally with warm custard.
