Ingredients:

  • 1 lb (450g) ground beef (preferably 80/20 for flavor)
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 2 medium tomatoes, diced
  • 1 small red onion, finely chopped
  • 1 jalapeño, deseeded and minced
  • 1 tablespoon fresh cilantro, chopped
  • Juice of 1 lime
  • 1 cup shredded lettuce
  • 1 cup diced avocado (or guacamole)
  • ½ cup crumbled queso fresco or shredded cheddar cheese
  • Lime wedges for serving

Instructions:

  1. In a mixing bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, and salt. Mix well and set aside to let the flavors meld.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion, sauté until translucent (about 3-4 minutes). Stir in minced garlic, cooking for an additional 30 seconds.
  3. Add ground beef, breaking it apart and browning until fully cooked (about 5-7 minutes). Drain excess fat if necessary. Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for another 2 minutes to let flavors combine.
  4. In another skillet (or directly over a gas flame for a smoky flavor), lightly char the corn tortillas for about 30 seconds on each side until warm and pliable.
  5. On each tortilla, place a generous spoonful of the seasoned beef, followed by lettuce, diced avocado, cheese, and salsa.
  6. Garnish with lime wedges and serve immediately.
