Ingredients:
- 2 cups (250g) all-purpose flour
- 1/4 teaspoon (1g) salt
- 1 teaspoon (4g) sugar
- 1 cup (226g) unsalted butter, chilled and cubed
- 1/4 cup (60ml) ice water
- 2 large (about 500g) Granny Smith apples, peeled, cored, and diced
- 1/4 cup (50g) brown sugar
- 1 teaspoon (2g) cinnamon
- 1/4 teaspoon (1g) nutmeg
- 1 tablespoon (15ml) lemon juice
- 1 tablespoon (8g) cornstarch
- 1 egg, for egg wash
Instructions:
- In a large bowl, whisk together flour, salt, and sugar.
- Cut in chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
- Add ice water gradually until the dough comes together.
- Divide the dough into two discs, wrap in plastic wrap, and chill for at least 30 minutes.
- In a mixing bowl, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out one disc of dough on a floured surface until about 1/8 inch thick.
- Cut into squares approximately 6x6 inches.
- Place a tablespoon of apple filling in the center of each square.
- Fold the dough over to form a triangle and seal the edges with a fork.
- Repeat with remaining dough and filling.
- Brush the tops of each turnover with beaten egg.
- Bake for 20-25 minutes, until golden brown and puffed up.
- Cool slightly before serving.
