Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1/4 teaspoon (1g) salt
  • 1 teaspoon (4g) sugar
  • 1 cup (226g) unsalted butter, chilled and cubed
  • 1/4 cup (60ml) ice water
  • 2 large (about 500g) Granny Smith apples, peeled, cored, and diced
  • 1/4 cup (50g) brown sugar
  • 1 teaspoon (2g) cinnamon
  • 1/4 teaspoon (1g) nutmeg
  • 1 tablespoon (15ml) lemon juice
  • 1 tablespoon (8g) cornstarch
  • 1 egg, for egg wash

Instructions:

  1. In a large bowl, whisk together flour, salt, and sugar.
  2. Cut in chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  3. Add ice water gradually until the dough comes together.
  4. Divide the dough into two discs, wrap in plastic wrap, and chill for at least 30 minutes.
  5. In a mixing bowl, combine diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch. Mix well.
  6. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  7. Roll out one disc of dough on a floured surface until about 1/8 inch thick.
  8. Cut into squares approximately 6x6 inches.
  9. Place a tablespoon of apple filling in the center of each square.
  10. Fold the dough over to form a triangle and seal the edges with a fork.
  11. Repeat with remaining dough and filling.
  12. Brush the tops of each turnover with beaten egg.
  13. Bake for 20-25 minutes, until golden brown and puffed up.
  14. Cool slightly before serving.
