Ingredients:

  • 1 cup (90g) rolled oats
  • 1 cup (120g) all-purpose flour
  • 1 cup (80g) desiccated coconut
  • 1 cup (200g) brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 cup (115g) unsalted butter
  • 2 tablespoons golden syrup (or substitute with maple syrup)
  • 2 tablespoons boiling water

Instructions:

  1. Preheat your oven to 160°C (320°F).
  2. In a large mixing bowl, combine rolled oats, flour, coconut, brown sugar, and baking soda. Mix well.
  3. In a small saucepan, melt together butter and golden syrup over low heat.
  4. In a separate bowl, mix boiling water with baking soda, then add to the melted butter mixture. Pour into dry ingredients and stir until just combined.
  5. Using a cookie scoop or spoon, drop tablespoons of dough onto the prepared baking tray, spacing them about 5cm (2 inches) apart.
  6. Bake for 10-12 minutes until golden brown.
  7. Allow the biscuits to cool on the tray for a few minutes before transferring them to a wire rack to cool completely.
