Ingredients:

  • ¼ cup olive oil
  • Zest and juice of 1 lemon
  • Zest and juice of 1 lime
  • 2 tablespoons honey
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 salmon fillets, skin-on (6 ounces each)

Instructions:

  1. In a mixing bowl, combine olive oil, lemon zest, lime zest, lemon juice, lime juice, honey, dill, parsley, garlic, salt, and pepper.
  2. Place salmon fillets in a shallow dish or resealable plastic bag and pour the marinade over the salmon, ensuring it's well-coated. Cover and refrigerate for 30 minutes.
  3. Preheat your grill to medium-high heat (about 375°F / 190°C).
  4. Remove salmon from marinade and discard the marinade. Place salmon skin-side down on the grill and grill for about 4-5 minutes per side until it flakes easily with a fork.
  5. Remove from grill and let rest for a few minutes before serving.
