- ½ cup (113g) unsalted butter, softened
- 2 cups (240g) powdered sugar
- 2-4 tablespoons (30-60ml) milk or cream
- ½ teaspoon (2.5ml) vanilla extract
Instructions:
- Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Incorporate the Wet Ingredients: Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
- Gradually Add Dry to Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Prepare the Cinnamon-Sugar Filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon.
- Shape the Cookies: Roll the dough into a log shape on a lightly floured surface. Spread the cinnamon mixture evenly over the dough. Slice the log into cookies about 1/2 inch thick. Place cookies on baking sheets lined with parchment paper or silicone mats.
- Chill the Dough: Cover the baking sheets and chill in the refrigerator for at least 30 minutes.
- Bake the Cookies: Preheat oven to 375°F (190°C). Bake for 10-12 minutes, or until the edges are lightly golden brown.
