Ingredients:

  • 1 cup (226g) unsalted butter, softened
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) packed light brown sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 ½ cups (300g) all-purpose flour
  • 1 teaspoon (5g) baking soda
  • ½ teaspoon (2.5g) salt
  • ½ cup (113g) unsalted butter, softened
  • ¾ cup (150g) packed light brown sugar
  • 2 tablespoons (30ml) ground cinnamon
  • 4 ounces (113g) cream cheese, softened
  • ½ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 2-4 tablespoons (30-60ml) milk or cream
  • ½ teaspoon (2.5ml) vanilla extract

Instructions:

  1. Cream the Butter and Sugars: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  2. Incorporate the Wet Ingredients: Beat in the eggs one at a time, then stir in the vanilla extract.
  3. Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually Add Dry to Wet: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Prepare the Cinnamon-Sugar Filling: In a small bowl, combine the softened butter, brown sugar, and cinnamon.
  6. Shape the Cookies: Roll the dough into a log shape on a lightly floured surface. Spread the cinnamon mixture evenly over the dough. Slice the log into cookies about 1/2 inch thick. Place cookies on baking sheets lined with parchment paper or silicone mats.
  7. Chill the Dough: Cover the baking sheets and chill in the refrigerator for at least 30 minutes.
  8. Bake the Cookies: Preheat oven to 375°F (190°C). Bake for 10-12 minutes, or until the edges are lightly golden brown.
  9. Cool the Cookies: Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  10. Make the Cream Cheese Glaze: In a large bowl, beat together the softened cream cheese and butter until smooth. Gradually add the powdered sugar, beating until combined. Add milk or cream, 1 tablespoon at a time, until desired consistency is reached. Stir in vanilla extract.
  11. Glaze the Cookies: Once the cookies are completely cooled, drizzle or spread the cream cheese glaze over the top.
