Ingredients:
- 250g whole wheat pastry flour
- 250g all-purpose flour
- 7g active dry yeast
- 120ml warm water (110°F)
- 120g plain full fat Greek yogurt
- 60ml maple syrup
- 1 large egg
- 56g unsalted butter, melted
- 5g sea salt
- 100g coconut sugar
- 15g Ceylon cinnamon
- 0.25 tsp ground nutmeg
- 30g softened butter
- 60g finely chopped pecans
- 60g low-fat cream cheese
- 30ml maple syrup
- 15ml reduced apple cider
- 1 tsp vanilla bean paste
Instructions:
- Whisk yeast into warm water with a teaspoon of maple syrup. Let sit until foamy (about 5-10 mins).
- Combine the yeast mixture with yogurt, remaining maple syrup, egg, and melted butter. Gradually add flours and salt.
- Knead the dough for 8 minutes until smooth and slightly tacky.
- Place in a lightly oiled bowl, cover tightly, and refrigerate for 8 to 10 hours for a cold-proof.
