Ingredients:
- 2 lbs large firm strawberries
- 12 oz high-quality dark chocolate melting wafers
- 4 oz white chocolate chips
- 0.5 cup crushed nuts
- 1 head kale or parsley
- 24 12-inch bamboo skewers
- 1 block floral foam
- 1 decorative vase or bucket
Instructions:
- Rinse the strawberries under cold water and pat each berry dry individually with paper towels. Let them sit at room temperature for 30 minutes to prevent chocolate seizing or sweating.
- Place dark chocolate in a microwave-safe glass bowl. Heat in 15-second intervals, stirring vigorously between each, until the mixture is velvety and smooth.
- Insert a bamboo skewer into the green hull end of each strawberry, pushing it about halfway through the fruit.
- Dip each strawberry into the melted dark chocolate, swirling to coat. Allow excess chocolate to drip off, then place on parchment paper or upright in a temporary stand to set.
- Melt the white chocolate in a piping bag or Ziploc bag. Snip a tiny corner and drizzle over the hardened dark chocolate shell. If using nuts, sprinkle them on while the chocolate is still wet.
- Place floral foam into the base of your vase. Insert the skewered strawberries at varying heights to create a rounded bouquet shape. Fill gaps between skewers with kale or parsley 'greenery'.
