Ingredients:

  • 2 lbs large firm strawberries
  • 12 oz high-quality dark chocolate melting wafers
  • 4 oz white chocolate chips
  • 0.5 cup crushed nuts
  • 1 head kale or parsley
  • 24 12-inch bamboo skewers
  • 1 block floral foam
  • 1 decorative vase or bucket

Instructions:

  1. Rinse the strawberries under cold water and pat each berry dry individually with paper towels. Let them sit at room temperature for 30 minutes to prevent chocolate seizing or sweating.
  2. Place dark chocolate in a microwave-safe glass bowl. Heat in 15-second intervals, stirring vigorously between each, until the mixture is velvety and smooth.
  3. Insert a bamboo skewer into the green hull end of each strawberry, pushing it about halfway through the fruit.
  4. Dip each strawberry into the melted dark chocolate, swirling to coat. Allow excess chocolate to drip off, then place on parchment paper or upright in a temporary stand to set.
  5. Melt the white chocolate in a piping bag or Ziploc bag. Snip a tiny corner and drizzle over the hardened dark chocolate shell. If using nuts, sprinkle them on while the chocolate is still wet.
  6. Place floral foam into the base of your vase. Insert the skewered strawberries at varying heights to create a rounded bouquet shape. Fill gaps between skewers with kale or parsley 'greenery'.
