Ingredients:
- 1.5 cups mashed overripe bananas (approx. 3 large bananas)
- 0.5 cup unsalted butter, melted and cooled (113g)
- 0.5 cup granulated white sugar (100g)
- 0.5 cup light brown sugar, packed (100g)
- 1 large egg, room temperature
- 1 tsp pure vanilla extract
- 1.5 cups all-purpose flour (190g)
- 1 tsp baking soda
- 0.5 tsp fine sea salt
- 0.5 tsp ground cinnamon
- 1 cup semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Generously grease the cavities of two 4-cavity mini loaf pans with butter or non-stick spray.
- In a large mixing bowl, whisk together the melted butter, granulated sugar, and light brown sugar until the mixture resembles wet sand.
- Add the egg and vanilla extract to the sugar mixture, whisking vigorously until the color lightens slightly. Fold in the mashed bananas.
- In a separate bowl, sift together the flour, baking soda, sea salt, and cinnamon. Gradually add the dry ingredients to the wet base using a silicone spatula, folding gently until no streaks of flour remain.
- Gently fold in 3/4 cup of the chocolate chips. Divide the batter evenly between the 8 mini loaf cavities.
- Sprinkle the remaining 1/4 cup of chocolate chips over the tops of the loaves. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
- Allow loaves to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
