Ingredients:

  • 1.5 cups mashed overripe bananas (approx. 3 large bananas)
  • 0.5 cup unsalted butter, melted and cooled (113g)
  • 0.5 cup granulated white sugar (100g)
  • 0.5 cup light brown sugar, packed (100g)
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • 1.5 cups all-purpose flour (190g)
  • 1 tsp baking soda
  • 0.5 tsp fine sea salt
  • 0.5 tsp ground cinnamon
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Generously grease the cavities of two 4-cavity mini loaf pans with butter or non-stick spray.
  2. In a large mixing bowl, whisk together the melted butter, granulated sugar, and light brown sugar until the mixture resembles wet sand.
  3. Add the egg and vanilla extract to the sugar mixture, whisking vigorously until the color lightens slightly. Fold in the mashed bananas.
  4. In a separate bowl, sift together the flour, baking soda, sea salt, and cinnamon. Gradually add the dry ingredients to the wet base using a silicone spatula, folding gently until no streaks of flour remain.
  5. Gently fold in 3/4 cup of the chocolate chips. Divide the batter evenly between the 8 mini loaf cavities.
  6. Sprinkle the remaining 1/4 cup of chocolate chips over the tops of the loaves. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow loaves to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
