Ingredients:

  • 1 lb Ground Chicken (93/7 lean)
  • 1/2 cup Freshly Grated Parmesan Cheese
  • 1 Large Egg
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Sea Salt
  • 1/3 cup Sugar-Free Marinara sauce
  • 1 cup Shredded Low-Moisture Mozzarella

Instructions:

  1. Mix the 1 lb ground chicken, 1/2 cup Parmesan, 1 egg, and all spices in a bowl. Combine until the mixture is uniform and tacky.
  2. Place a large sheet of parchment paper on your baking sheet.
  3. Spread the chicken mixture onto the parchment. Aim for about 1/4 inch thickness for the best balance of chew and crunch.
  4. Shape the edges slightly higher than the center to create a rim that holds the sauce.
  5. Bake for 20 minutes until the surface is matte and the edges are golden brown.
  6. Remove from the oven and carefully drain any excess moisture that may have pooled on the parchment.
  7. Spread the 1/3 cup marinara sauce evenly, leaving a small border.
  8. Top with the 1 cup mozzarella cheese.
  9. Broil for 3 to 5 minutes until the cheese is bubbly and shows toasted brown spots.
