Ingredients:
- 4 boneless, skinless chicken breasts (about 6 oz/170g each)
- 1 tablespoon olive oil (15 ml)
- 1 teaspoon dried Italian seasoning (5 ml)
- 1/2 teaspoon garlic powder (2.5 ml)
- Salt and freshly ground black pepper to taste
- 1 pint cherry tomatoes, halved (about 300g)
- 8 ounces fresh mozzarella cheese, sliced (about 225g)
- 1/4 cup fresh basil leaves, roughly chopped (about 15g)
- 1/4 cup balsamic glaze (store-bought or homemade) (60ml)
- Fresh basil sprigs (optional)
Instructions:
- Pound chicken breasts to an even thickness (about ½ inch). This ensures even cooking.
- In a small bowl, combine olive oil, Italian seasoning, garlic powder, salt, and pepper. Rub the mixture all over the chicken breasts.
- Heat a large skillet over medium-high heat. Add the seasoned chicken and sear for 5-7 minutes per side, or until cooked through and golden brown. The internal temperature should reach 165°F (74°C).
- While the chicken is still in the skillet (or after transferring to a baking sheet), top each chicken breast with sliced mozzarella and halved cherry tomatoes.
- Cover the skillet (or place baking sheet under the broiler) and cook until the mozzarella is melted and bubbly, about 2-3 minutes. Watch carefully to prevent burning!
- Remove from heat and sprinkle with fresh basil leaves. Drizzle with balsamic glaze. Garnish with fresh basil sprigs, if desired. Serve immediately. Enjoy your Chicken Caprese!
