Ingredients:

  • 4 boneless, skinless chicken breasts (about 6 oz/170g each)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon dried Italian seasoning (5 ml)
  • 1/2 teaspoon garlic powder (2.5 ml)
  • Salt and freshly ground black pepper to taste
  • 1 pint cherry tomatoes, halved (about 300g)
  • 8 ounces fresh mozzarella cheese, sliced (about 225g)
  • 1/4 cup fresh basil leaves, roughly chopped (about 15g)
  • 1/4 cup balsamic glaze (store-bought or homemade) (60ml)
  • Fresh basil sprigs (optional)

Instructions:

  1. Pound chicken breasts to an even thickness (about ½ inch). This ensures even cooking.
  2. In a small bowl, combine olive oil, Italian seasoning, garlic powder, salt, and pepper. Rub the mixture all over the chicken breasts.
  3. Heat a large skillet over medium-high heat. Add the seasoned chicken and sear for 5-7 minutes per side, or until cooked through and golden brown. The internal temperature should reach 165°F (74°C).
  4. While the chicken is still in the skillet (or after transferring to a baking sheet), top each chicken breast with sliced mozzarella and halved cherry tomatoes.
  5. Cover the skillet (or place baking sheet under the broiler) and cook until the mozzarella is melted and bubbly, about 2-3 minutes. Watch carefully to prevent burning!
  6. Remove from heat and sprinkle with fresh basil leaves. Drizzle with balsamic glaze. Garnish with fresh basil sprigs, if desired. Serve immediately. Enjoy your Chicken Caprese!
