Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 ½ cups (300g) brown sugar, packed
  • 1 large egg (50g)
  • 1 tsp (5ml) vanilla extract
  • 1 ½ cups (190g) all-purpose flour
  • 1 tsp (5g) baking soda
  • 1 tsp (3g) cinnamon
  • ½ tsp (3g) salt
  • 3 cups (270g) quick oats
  • 1 ½ cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides to create a sling for easy removal.
  2. In a large mixing bowl, cream together the softened unsalted butter and brown sugar until the mixture is pale and fluffy.
  3. Beat in the egg and vanilla extract until the mixture is glossy and well-emulsified.
  4. Sift in the all-purpose flour, baking soda, cinnamon, and salt. Stir until just combined, taking care not to overmix.
  5. Fold in the quick oats and semi-sweet chocolate chips until evenly distributed.
  6. Transfer the dough to the prepared pan. Press firmly and evenly with a spatula to eliminate air pockets.
  7. Bake for 20-22 minutes until the edges are deep golden brown and the center is set but still slightly soft to the touch. Allow to cool before slicing.
