Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 ½ cups (300g) brown sugar, packed
- 1 large egg (50g)
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (190g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (3g) cinnamon
- ½ tsp (3g) salt
- 3 cups (270g) quick oats
- 1 ½ cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides to create a sling for easy removal.
- In a large mixing bowl, cream together the softened unsalted butter and brown sugar until the mixture is pale and fluffy.
- Beat in the egg and vanilla extract until the mixture is glossy and well-emulsified.
- Sift in the all-purpose flour, baking soda, cinnamon, and salt. Stir until just combined, taking care not to overmix.
- Fold in the quick oats and semi-sweet chocolate chips until evenly distributed.
- Transfer the dough to the prepared pan. Press firmly and evenly with a spatula to eliminate air pockets.
- Bake for 20-22 minutes until the edges are deep golden brown and the center is set but still slightly soft to the touch. Allow to cool before slicing.
