Ingredients:

  • 1 ½ cups (180g) tapioca flour
  • ½ cup (120ml) milk
  • ¼ cup (60ml) olive oil
  • 1 large egg
  • ½ teaspoon salt
  • 1 cup (100g) grated cheese
  • Optional: 1/4 teaspoon garlic powder or onion powder

Instructions:

  1. Preheat oven to 400°F (200°C). Grease a muffin tin or line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the milk, olive oil, and egg until well combined.
  3. Gradually whisk in the tapioca flour and salt until a smooth batter forms. Avoid overmixing.
  4. Stir in the grated cheese (and garlic or onion powder, if using) until evenly distributed.
  5. Scoop or spoon the batter into the prepared muffin tin or onto the baking sheet, leaving a little space between each bread.
  6. Bake for 15-20 minutes, or until the cheese breads are puffed up and golden brown around the edges.
  7. Let cool slightly before removing from the muffin tin or baking sheet. Serve warm and enjoy!
