Ingredients:
- 1 ½ cups (180g) tapioca flour
- ½ cup (120ml) milk
- ¼ cup (60ml) olive oil
- 1 large egg
- ½ teaspoon salt
- 1 cup (100g) grated cheese
- Optional: 1/4 teaspoon garlic powder or onion powder
Instructions:
- Preheat oven to 400°F (200°C). Grease a muffin tin or line a baking sheet with parchment paper.
- In a large bowl, whisk together the milk, olive oil, and egg until well combined.
- Gradually whisk in the tapioca flour and salt until a smooth batter forms. Avoid overmixing.
- Stir in the grated cheese (and garlic or onion powder, if using) until evenly distributed.
- Scoop or spoon the batter into the prepared muffin tin or onto the baking sheet, leaving a little space between each bread.
- Bake for 15-20 minutes, or until the cheese breads are puffed up and golden brown around the edges.
- Let cool slightly before removing from the muffin tin or baking sheet. Serve warm and enjoy!
