Ingredients:
- 1 cup (approximately 150g) zucchini, grated
- 1 large egg
- ¼ cup (approximately 28g) sharp cheddar cheese, finely shredded
- ⅓ cup (approximately 35g) Italian breadcrumbs
- 1 tablespoon (approximately 5g) grated Parmesan cheese
- 1 teaspoon (approximately 2g) minced onion
- Salt and black pepper to taste
- Cooking spray
Instructions:
- Preheat oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray.
- Grate the zucchini. Wrap the grated zucchini in a clean kitchen towel or several layers of paper towels and squeeze out as much excess water as possible.
- In a medium bowl, combine the drained zucchini, egg, shredded cheddar cheese, Italian breadcrumbs, grated Parmesan cheese, minced onion, salt, and pepper. Mix well.
- Use a tablespoon to scoop the zucchini mixture and place spoonfuls onto the prepared baking sheet, spacing them slightly apart.
- Gently flatten each tot with the bottom of a glass or small bowl.
- Transfer the baking sheet to the preheated oven and bake for 18 minutes, flipping the tots over halfway through, until they are golden brown and crispy.
- Let the tots cool slightly on the baking sheet before serving.
