Ingredients:

  • 1 cup (approximately 150g) zucchini, grated
  • 1 large egg
  • ¼ cup (approximately 28g) sharp cheddar cheese, finely shredded
  • ⅓ cup (approximately 35g) Italian breadcrumbs
  • 1 tablespoon (approximately 5g) grated Parmesan cheese
  • 1 teaspoon (approximately 2g) minced onion
  • Salt and black pepper to taste
  • Cooking spray

Instructions:

  1. Preheat oven to 400°F (200°C). Lightly spray a baking sheet with cooking spray.
  2. Grate the zucchini. Wrap the grated zucchini in a clean kitchen towel or several layers of paper towels and squeeze out as much excess water as possible.
  3. In a medium bowl, combine the drained zucchini, egg, shredded cheddar cheese, Italian breadcrumbs, grated Parmesan cheese, minced onion, salt, and pepper. Mix well.
  4. Use a tablespoon to scoop the zucchini mixture and place spoonfuls onto the prepared baking sheet, spacing them slightly apart.
  5. Gently flatten each tot with the bottom of a glass or small bowl.
  6. Transfer the baking sheet to the preheated oven and bake for 18 minutes, flipping the tots over halfway through, until they are golden brown and crispy.
  7. Let the tots cool slightly on the baking sheet before serving.
