Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 Tablespoon (12g) granulated sugar
  • ½ teaspoon (2g) baking powder
  • 1 teaspoon (6g) salt
  • ½ cup (113g / 1 stick) cold unsalted butter, cubed
  • ⅔ cup (160ml) cold milk
  • 1 cup (240ml) heavy cream, well chilled
  • 2 Tablespoons (25g) granulated sugar
  • 1 cup (approximately 200g) fresh strawberries, hulled and sliced
  • 1 box (approximately 48 oz / 1.4 L) vanilla ice cream

Instructions:

  1. Combine dry ingredients (flour, sugar, baking powder, salt).
  2. Cut in cold butter until the mixture resembles coarse crumbs.
  3. Stir in cold milk until just combined; dough will be slightly sticky.
  4. Turn dough out onto a lightly floured surface.
  5. Pat the dough into a 1-inch thick rectangle.
  6. Fold the dough in half and cut it in half width way and put the those 2 piece on top of eachother
  7. Make it a rectangle again and repeat this process 3 times more.
  8. Roll the dough to ¾ to 1-inch thickness.
  9. Cut out biscuits using a floured cookie cutter.
  10. Place biscuits on a baking sheet.
  11. Bake until golden brown on top.
  12. Cool completely before assembling.
  13. Whip heavy cream and sugar until stiff peaks form.
  14. Cut cooled biscuits in half horizontally.
  15. Place a scoop of ice cream on the bottom half of each biscuit.
  16. Top with whipped cream and sliced strawberries.
  17. Cover with top half of the biscuit.
  18. Serve immediately.
