Ingredients:
- 2 cups (250g) all-purpose flour
- 1 Tablespoon (12g) granulated sugar
- ½ teaspoon (2g) baking powder
- 1 teaspoon (6g) salt
- ½ cup (113g / 1 stick) cold unsalted butter, cubed
- ⅔ cup (160ml) cold milk
- 1 cup (240ml) heavy cream, well chilled
- 2 Tablespoons (25g) granulated sugar
- 1 cup (approximately 200g) fresh strawberries, hulled and sliced
- 1 box (approximately 48 oz / 1.4 L) vanilla ice cream
Instructions:
- Combine dry ingredients (flour, sugar, baking powder, salt).
- Cut in cold butter until the mixture resembles coarse crumbs.
- Stir in cold milk until just combined; dough will be slightly sticky.
- Turn dough out onto a lightly floured surface.
- Pat the dough into a 1-inch thick rectangle.
- Fold the dough in half and cut it in half width way and put the those 2 piece on top of eachother
- Make it a rectangle again and repeat this process 3 times more.
- Roll the dough to ¾ to 1-inch thickness.
- Cut out biscuits using a floured cookie cutter.
- Place biscuits on a baking sheet.
- Bake until golden brown on top.
- Cool completely before assembling.
- Whip heavy cream and sugar until stiff peaks form.
- Cut cooled biscuits in half horizontally.
- Place a scoop of ice cream on the bottom half of each biscuit.
- Top with whipped cream and sliced strawberries.
- Cover with top half of the biscuit.
- Serve immediately.
