Ingredients:

  • 2 cups (475ml) whole milk
  • 1/2 cup (120ml) heavy cream (optional)
  • 1/4 cup (25g) unsweetened cocoa powder
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves
  • Pinch of ground nutmeg
  • 4 ounces (115g) dark chocolate, chopped
  • Pinch of salt

Instructions:

  1. In a saucepan, whisk together milk, heavy cream (if using), cocoa powder, sugar, cinnamon, ginger, cardamom, cloves, nutmeg, and salt.
  2. Heat the mixture over medium heat, stirring frequently, until it just begins to simmer (small bubbles form around the edges). Do not boil.
  3. Remove from heat and add the chopped dark chocolate.
  4. Whisk vigorously until the chocolate is completely melted and the mixture is smooth and glossy.
  5. Pour into mugs and garnish as desired. Serve immediately!
