Ingredients:
- 2 cups (475ml) whole milk
- 1/2 cup (120ml) heavy cream (optional)
- 1/4 cup (25g) unsweetened cocoa powder
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cardamom
- 1/8 teaspoon ground cloves
- Pinch of ground nutmeg
- 4 ounces (115g) dark chocolate, chopped
- Pinch of salt
Instructions:
- In a saucepan, whisk together milk, heavy cream (if using), cocoa powder, sugar, cinnamon, ginger, cardamom, cloves, nutmeg, and salt.
- Heat the mixture over medium heat, stirring frequently, until it just begins to simmer (small bubbles form around the edges). Do not boil.
- Remove from heat and add the chopped dark chocolate.
- Whisk vigorously until the chocolate is completely melted and the mixture is smooth and glossy.
- Pour into mugs and garnish as desired. Serve immediately!
