Ingredients:
- 1/2 medium, very ripe banana (approx. 60g), mashed
- 1 tsp neutral oil (vegetable or canola)
- 1 tbsp milk (any type)
- 1/4 tsp vanilla extract
- 2 tbsp all-purpose flour
- 1 tbsp packed light brown sugar
- 1/4 tsp baking powder
- Pinch of fine sea salt
- 2 tbsp chopped Halloween Candy (e.g., Snickers, Reese’s Cups)
Instructions:
- Roughly chop the selected Halloween candy into small, pea-sized chunks. Set aside the full amount, reserving 1/2 tablespoon for topping.
- In the microwave-safe mug (12 oz minimum), mash the ripe banana half thoroughly with a fork until almost entirely smooth.
- Stir the oil, milk, and vanilla extract into the mashed banana until well combined.
- In a separate small bowl, whisk together the flour, brown sugar, baking powder, and salt.
- Add the dry ingredient mixture to the wet mixture in the mug. Mix gently until just combined. Stop mixing immediately once you no longer see streaks of dry flour.
- Fold in 1.5 tablespoons of the chopped candy. Place the reserved 1/2 tablespoon of candy pieces on top of the batter.
- Microwave on High (100% power) for 60 to 90 seconds. The muffin is done when the edges are visibly set and the center looks slightly sticky. Cook in 10-second bursts if needed.
- Carefully remove the hot mug and let the muffin rest for 1–2 minutes before serving directly from the mug.
