Ingredients:

  • 5 ounces (142g) baby spinach, washed and dried
  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 1 cup (125g) fresh raspberries
  • 1 cup (170g) fresh blueberries
  • 1 cup (100g) walnuts, roughly chopped
  • 1 cup (113g) feta cheese, crumbled
  • 1/2 cup (120ml) avocado oil (or extra virgin olive oil)
  • 1/4 cup (60ml) rose vinegar
  • 2 tablespoons (30ml) honey
  • 1/4 teaspoon (1.25ml) salt
  • 1/4 teaspoon (0.5g) black pepper
  • 1/4 teaspoon (1.25ml) Dijon mustard

Instructions:

  1. Wash and thoroughly dry the spinach and all the berries. Slice the strawberries. Chop the walnuts and crumble the feta cheese.
  2. In a small bowl, whisk together the avocado oil, rose vinegar, honey, salt, pepper, and Dijon mustard until well combined and emulsified.
  3. Place the spinach in the large salad bowl. Top with the strawberries, raspberries, blueberries, walnuts, and feta cheese.
  4. Just before serving, drizzle the vinaigrette over the salad. Toss gently to combine. Serve immediately.
