Ingredients:
- 5 ounces (142g) baby spinach, washed and dried
- 2 cups (300g) fresh strawberries, hulled and sliced
- 1 cup (125g) fresh raspberries
- 1 cup (170g) fresh blueberries
- 1 cup (100g) walnuts, roughly chopped
- 1 cup (113g) feta cheese, crumbled
- 1/2 cup (120ml) avocado oil (or extra virgin olive oil)
- 1/4 cup (60ml) rose vinegar
- 2 tablespoons (30ml) honey
- 1/4 teaspoon (1.25ml) salt
- 1/4 teaspoon (0.5g) black pepper
- 1/4 teaspoon (1.25ml) Dijon mustard
Instructions:
- Wash and thoroughly dry the spinach and all the berries. Slice the strawberries. Chop the walnuts and crumble the feta cheese.
- In a small bowl, whisk together the avocado oil, rose vinegar, honey, salt, pepper, and Dijon mustard until well combined and emulsified.
- Place the spinach in the large salad bowl. Top with the strawberries, raspberries, blueberries, walnuts, and feta cheese.
- Just before serving, drizzle the vinaigrette over the salad. Toss gently to combine. Serve immediately.
