Ingredients:
- 2 cups (475ml) fresh or frozen mixed berries (strawberries, raspberries, blueberries)
- 1/2 cup (120ml) water
- 2 tablespoons (30ml) lemon juice, fresh
- 3 tablespoons (25g) gelatin powder, unflavored
- 2-3 tablespoons (30-45ml) honey (or maple syrup for vegan option), adjust to taste
- Optional: 1/4 teaspoon (1g) vitamin C powder (ascorbic acid)
Instructions:
- Blend the mixed berries, water, and lemon juice in a blender until smooth.
- For a smoother gummy, strain the puree through a fine-mesh sieve to remove seeds.
- In a small bowl, sprinkle the gelatin powder over 1/4 cup of the berry puree. Let it sit for 5 minutes to bloom.
- Pour the remaining berry puree into a small saucepan. Heat over medium heat, stirring occasionally, until it begins to simmer gently (don't boil!).
- Reduce heat to low and add the bloomed gelatin mixture to the saucepan. Whisk constantly until the gelatin is completely dissolved, about 2-3 minutes.
- Remove the saucepan from the heat. Stir in the honey (or maple syrup) and vitamin C powder (if using) until well combined. Taste and adjust sweetness as needed.
- Carefully pour the mixture into the silicone gummy bear molds using a dropper or small spoon.
- Place the filled molds in the refrigerator for at least 2-3 hours, or until the gummy bears are firm.
- Once set, gently pop the gummy bears out of the molds. Store in an airtight container in the refrigerator for up to a week. Enjoy your Healthy Gummy Bears!
