Ingredients:
- 1 pound (450g) ground beef (80% lean)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1 can (15 oz/425g) black beans, drained and rinsed
- 1 cup (150g) corn (fresh or frozen)
- 1 cup (100g) shredded cheese (cheddar or Mexican blend)
- 4 large flour tortillas
- 1 cup (240ml) sour cream
- Fresh coriander, chopped, for garnish
- Sliced jalapeños (optional)
Instructions:
- Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon.
- Add diced onion and garlic; sauté until the onion is translucent. Stir in chili powder, cumin, and paprika; cook for 2 minutes. Season with salt and pepper to taste. Add black beans and corn; cook until heated through.
- Warm tortillas in another skillet or microwave until pliable.
- Place a generous scoop of the beef mixture in the center of each tortilla. Sprinkle with shredded cheese, then fold in the sides and roll tightly.
- (Optional) In the same skillet, lightly toast the burritos seam-side down until golden, 2-3 minutes on each side.
- Cut in half, garnish with sour cream and fresh coriander. Enjoy!
