Ingredients:

  • 1 pound (450g) ground beef (80% lean)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (15 oz/425g) black beans, drained and rinsed
  • 1 cup (150g) corn (fresh or frozen)
  • 1 cup (100g) shredded cheese (cheddar or Mexican blend)
  • 4 large flour tortillas
  • 1 cup (240ml) sour cream
  • Fresh coriander, chopped, for garnish
  • Sliced jalapeños (optional)

Instructions:

  1. Heat a skillet over medium heat. Add ground beef and cook until browned, breaking it apart with a wooden spoon.
  2. Add diced onion and garlic; sauté until the onion is translucent. Stir in chili powder, cumin, and paprika; cook for 2 minutes. Season with salt and pepper to taste. Add black beans and corn; cook until heated through.
  3. Warm tortillas in another skillet or microwave until pliable.
  4. Place a generous scoop of the beef mixture in the center of each tortilla. Sprinkle with shredded cheese, then fold in the sides and roll tightly.
  5. (Optional) In the same skillet, lightly toast the burritos seam-side down until golden, 2-3 minutes on each side.
  6. Cut in half, garnish with sour cream and fresh coriander. Enjoy!
