Ingredients:
- 8 tbsp (113g) unsalted butter
- 12-15 fresh sage leaves (whole)
- 2 cloves (6g) garlic, minced
- ½ tsp (1g) cracked black pepper
- 1 tbsp (15ml) fresh lemon juice
- 2 tbsp (30ml) reserved pasta water
Instructions:
- Place the unsalted butter in the skillet over medium heat and let the butter melt completely until it begins to bubble and foam.
- Continue cooking the butter, stirring occasionally, until the foam subsides and small brown specks form at the bottom of the pan and the butter smells nutty and turns deep golden-brown.
- Immediately lower the heat to medium-low and add the whole sage leaves and minced garlic. Sizzle for 30–60 seconds until sage is translucent and crisp.
- Stir in the lemon juice and black pepper. If the sauce looks too oily, whisk in the reserved pasta water to create a creamy glaze, then remove from heat immediately.
