Ingredients:

  • 8 tbsp (113g) unsalted butter
  • 12-15 fresh sage leaves (whole)
  • 2 cloves (6g) garlic, minced
  • ½ tsp (1g) cracked black pepper
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (30ml) reserved pasta water

Instructions:

  1. Place the unsalted butter in the skillet over medium heat and let the butter melt completely until it begins to bubble and foam.
  2. Continue cooking the butter, stirring occasionally, until the foam subsides and small brown specks form at the bottom of the pan and the butter smells nutty and turns deep golden-brown.
  3. Immediately lower the heat to medium-low and add the whole sage leaves and minced garlic. Sizzle for 30–60 seconds until sage is translucent and crisp.
  4. Stir in the lemon juice and black pepper. If the sauce looks too oily, whisk in the reserved pasta water to create a creamy glaze, then remove from heat immediately.
