Ingredients:
- 1 cup (225g) cottage cheese
- 2 large (100g) eggs
- 1/4 cup (60ml) maple syrup
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (180g) oat flour
- 1 tsp (5g) baking powder
- 1/2 tsp (2g) ground cinnamon
- 1/4 tsp (1g) salt
- 1 1/2 cups (225g) fresh or frozen blueberries
- 1 tbsp (15g) melted butter
Instructions:
- Grease an 8x8 inch baking dish with melted butter. Note: Coat the corners well so the edges don't stick.
- Combine cottage cheese, eggs, maple syrup, and vanilla extract in your blender. Process until the mixture is completely smooth and velvety.
- Pour the blended mixture into a large mixing bowl.
- Stir in the oat flour, baking powder, cinnamon, and salt. Fold gently until just combined Note: Over mixing makes the bake tough.
- Carefully fold in the blueberries using a silicone spatula.
- Pour the batter into the prepared baking dish.
- Smooth the top with your spatula for an even bake.
- Bake at 350°F (175°C) for 30-35 minutes until the edges pull away from the pan and a toothpick comes out clean.
