Ingredients:

  • 1 pound (450g) thick-cut bacon, cooked until crispy and crumbled
  • 8 ounces (225g) cream cheese, softened
  • 1 cup (240ml) mayonnaise (full-fat for best flavor)
  • 1/2 cup (120ml) sour cream
  • 1/4 cup (60ml) shredded cheddar cheese (optional)
  • 1 cup (150g) grape tomatoes, diced
  • 1/2 cup (50g) chopped fresh romaine lettuce
  • 1/4 cup (25g) chopped red onion (optional)
  • 2 tablespoons chopped fresh chives or green onions (for garnish)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions:

  1. Cook bacon in a skillet until crispy. Drain on paper towels and crumble. Reserve a little bacon fat if you want to sautee your onions in it for a deeper flavour.
  2. In a large mixing bowl, beat together the softened cream cheese, mayonnaise, sour cream, and cheddar cheese (if using) until smooth and creamy.
  3. Add the crumbled bacon, diced tomatoes, lettuce, and red onion (if using) to the cream cheese mixture.
  4. Stir in the garlic powder, onion powder, and black pepper. Taste and add salt, if needed.
  5. Cover the dip and refrigerate for at least 30 minutes to allow the flavors to meld. Garnish with chives or green onions before serving.
