Ingredients:
- 1 lb lean ground turkey
- 1 tbsp olive oil
- 1 tbsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 large bell peppers, seeds removed and sliced into 2-inch wide strips
- 2 cups shredded sharp cheddar cheese
- 1/2 cup canned black beans, rinsed
- 1/2 cup frozen corn, thawed
- 1 cup fresh pico de gallo
- 1 medium avocado, diced
- 2 tbsp fresh cilantro, chopped
Instructions:
- Heat olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink (about 5-7 minutes).
- Stir in the chili powder, cumin, garlic powder, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
- Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
- Arrange the bell pepper strips in a single layer on the sheet pan, slightly overlapping.
- Spoon the seasoned meat evenly across the peppers, then add the black beans and corn.
- Top the arrangement with a generous layer of shredded cheese.
- Bake for 5-8 minutes, or broil for 2-3 minutes, until the cheese is bubbly and golden-brown.
- Remove from oven and immediately top with fresh pico de gallo, diced avocado, and chopped cilantro.
