Ingredients:

  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 large bell peppers, seeds removed and sliced into 2-inch wide strips
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup canned black beans, rinsed
  • 1/2 cup frozen corn, thawed
  • 1 cup fresh pico de gallo
  • 1 medium avocado, diced
  • 2 tbsp fresh cilantro, chopped

Instructions:

  1. Heat olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula, and cook until browned and no longer pink (about 5-7 minutes).
  2. Stir in the chili powder, cumin, garlic powder, salt, and black pepper. Cook for another 2 minutes until the spices are fragrant.
  3. Preheat the oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  4. Arrange the bell pepper strips in a single layer on the sheet pan, slightly overlapping.
  5. Spoon the seasoned meat evenly across the peppers, then add the black beans and corn.
  6. Top the arrangement with a generous layer of shredded cheese.
  7. Bake for 5-8 minutes, or broil for 2-3 minutes, until the cheese is bubbly and golden-brown.
  8. Remove from oven and immediately top with fresh pico de gallo, diced avocado, and chopped cilantro.
