Instructions:
- Prepare the aromatics: Peel and mince the fresh garlic cloves until very fine.
- Combine the liquids: In a medium mixing bowl or a sturdy zip-top bag, combine the soy sauce and lemon juice. Whisk briefly.
- Incorporate flavour and fat: Add the olive oil, minced garlic, crushed dried rosemary, and black pepper to the liquid base.
- Emulsify the marinade: Whisk vigorously for about 30 seconds until the mixture slightly thickens or comes together.
- Marinate the steak: Place your steaks into the marinade, ensuring every surface is coated. If using a bag, squeeze out excess air before sealing.
- Chill: Refrigerate the steaks for a minimum of 2 hours, but no longer than 6 hours for best texture.
- Prep for cooking: Remove the steaks from the marinade 30 minutes before cooking. Pat them very dry with paper towels. Discard the used marinade.
- Cook: Sear or grill the steaks to your desired internal temperature.
