Ingredients:
- 1.5 lbs boneless skinless chicken thighs, cut into bite-sized pieces
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp neutral oil
- 1/2 cup mayonnaise
- 1/4 cup Sriracha
- 2 tbsp honey
- 1 tsp rice vinegar
- 1 clove garlic, minced
Instructions:
- Pat the chicken pieces completely dry with paper towels and season evenly with salt and pepper.
- In a small bowl, whisk together the mayonnaise, Sriracha, honey, rice vinegar, and minced garlic until smooth.
- Heat the oil in a 12-inch skillet over medium-high heat until it shimmers.
- Add the chicken in a single layer and sear without moving for 3–4 minutes until a golden-brown crust forms.
- Flip the chicken and cook for another 3–4 minutes until nearly cooked through.
- Reduce heat to medium-low, pour the Bang Bang glaze over the chicken, and toss rapidly for 1–2 minutes until the sauce bubbles and thickens.
- Remove from heat immediately to prevent the mayonnaise emulsion from breaking.
