Ingredients:

  • 1.5 lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp neutral oil
  • 1/2 cup mayonnaise
  • 1/4 cup Sriracha
  • 2 tbsp honey
  • 1 tsp rice vinegar
  • 1 clove garlic, minced

Instructions:

  1. Pat the chicken pieces completely dry with paper towels and season evenly with salt and pepper.
  2. In a small bowl, whisk together the mayonnaise, Sriracha, honey, rice vinegar, and minced garlic until smooth.
  3. Heat the oil in a 12-inch skillet over medium-high heat until it shimmers.
  4. Add the chicken in a single layer and sear without moving for 3–4 minutes until a golden-brown crust forms.
  5. Flip the chicken and cook for another 3–4 minutes until nearly cooked through.
  6. Reduce heat to medium-low, pour the Bang Bang glaze over the chicken, and toss rapidly for 1–2 minutes until the sauce bubbles and thickens.
  7. Remove from heat immediately to prevent the mayonnaise emulsion from breaking.
