- 1 large Ripe Banana, mashed (approx 1/2 cup)
- 1 cup All-Purpose Flour
- 3/4 cup Milk (Skim or 2%)
- 1 large Egg
- 1 tsp Baking Powder
- 1 tsp Vanilla Extract
Instructions:
- Combine the mashed ripe banana, egg, milk, and vanilla extract in a medium bowl until thoroughly mixed and smooth.
- In a separate bowl, whisk together the all-purpose flour and baking powder.
- Gradually incorporate the dry ingredients into the wet mixture. Mix until just combined, ensuring the batter remains thick (like thick gravy or runny yogurt consistency). Do not overmix.
- Transfer the batter to a squeeze bottle or piping bag for easy dispensing.
- Heat a large non-stick griddle or skillet over medium-low heat. Pipe small dots of batter (cereal-sized) onto the hot surface, leaving space between each mini pancake.
- Cook for 30-60 seconds until bubbles appear on the surface and the edges look set. Flip carefully and cook for another 30 seconds until golden brown.
- Remove the pancake cereal from the griddle. Serve immediately in a bowl with a splash of milk.
