  • 1 large Ripe Banana, mashed (approx 1/2 cup)
  • 1 cup All-Purpose Flour
  • 3/4 cup Milk (Skim or 2%)
  • 1 large Egg
  • 1 tsp Baking Powder
  • 1 tsp Vanilla Extract

Instructions:

  1. Combine the mashed ripe banana, egg, milk, and vanilla extract in a medium bowl until thoroughly mixed and smooth.
  2. In a separate bowl, whisk together the all-purpose flour and baking powder.
  3. Gradually incorporate the dry ingredients into the wet mixture. Mix until just combined, ensuring the batter remains thick (like thick gravy or runny yogurt consistency). Do not overmix.
  4. Transfer the batter to a squeeze bottle or piping bag for easy dispensing.
  5. Heat a large non-stick griddle or skillet over medium-low heat. Pipe small dots of batter (cereal-sized) onto the hot surface, leaving space between each mini pancake.
  6. Cook for 30-60 seconds until bubbles appear on the surface and the edges look set. Flip carefully and cook for another 30 seconds until golden brown.
  7. Remove the pancake cereal from the griddle. Serve immediately in a bowl with a splash of milk.
