Ingredients:

  • 1 lb cremini mushrooms, halved
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 1 tbsp soy sauce
  • 1 tsp maple syrup
  • 1/2 tsp dried thyme
  • 1/4 tsp black pepper

Instructions:

  1. Preheat your oven to 400°F (200°C). Clean the mushrooms using a damp paper towel and slice them into halves or quarters.
  2. In a large mixing bowl, whisk together the olive oil, balsamic vinegar, soy sauce, maple syrup, thyme, and black pepper.
  3. Add the mushrooms and minced garlic to the bowl, tossing gently until every mushroom is evenly coated in the glaze.
  4. Spread the mushrooms in a single layer on a parchment-lined baking sheet to ensure airflow and caramelization.
  5. Roast for 15–20 minutes until the mushrooms are mahogany-colored and have slightly shrunken in size.
