Ingredients:

  • 2 large sweet potatoes (approx. 680g)
  • 2 tbsp all-purpose flour (16g)
  • 1 large egg (50g)
  • 1 tsp garlic powder (5g)
  • 1/2 tsp smoked paprika (2g)
  • 1/2 tsp kosher salt (3g)
  • 1/4 tsp black pepper (1g)
  • 2 tbsp olive oil, melted (30ml)
  • Olive oil spray

Instructions:

  1. Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake them whole for 45–60 minutes until tender.
  2. Allow potatoes to cool slightly, slice open, and scoop the velvety flesh into a large mixing bowl.
  3. Use a potato masher to break down the potato until no large lumps remain.
  4. Add the melted olive oil, egg, flour, garlic powder, paprika, salt, and pepper.
  5. Fold the ingredients together until a thick, moldable dough forms, ensuring seasoning is evenly distributed.
  6. Scoop about 1 tbsp of the mixture and roll it between your palms to create a small cylinder.
  7. Place the tots on a parchment-lined baking sheet, leaving 1 inch of space between each, and lightly spritz the tops with olive oil spray.
  8. Bake at 400°F (200°C) for 20–25 minutes, flipping them halfway through the cooking time.
