Ingredients:
- 2 large sweet potatoes (approx. 680g)
- 2 tbsp all-purpose flour (16g)
- 1 large egg (50g)
- 1 tsp garlic powder (5g)
- 1/2 tsp smoked paprika (2g)
- 1/2 tsp kosher salt (3g)
- 1/4 tsp black pepper (1g)
- 2 tbsp olive oil, melted (30ml)
- Olive oil spray
Instructions:
- Preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and bake them whole for 45–60 minutes until tender.
- Allow potatoes to cool slightly, slice open, and scoop the velvety flesh into a large mixing bowl.
- Use a potato masher to break down the potato until no large lumps remain.
- Add the melted olive oil, egg, flour, garlic powder, paprika, salt, and pepper.
- Fold the ingredients together until a thick, moldable dough forms, ensuring seasoning is evenly distributed.
- Scoop about 1 tbsp of the mixture and roll it between your palms to create a small cylinder.
- Place the tots on a parchment-lined baking sheet, leaving 1 inch of space between each, and lightly spritz the tops with olive oil spray.
- Bake at 400°F (200°C) for 20–25 minutes, flipping them halfway through the cooking time.
