Ingredients:
- 2 cups (160g) rolled oats (not instant)
- 1 teaspoon (5ml) baking powder
- 1/2 teaspoon (2.5ml) ground cinnamon
- 1/4 teaspoon (1.25ml) salt
- 2 cups (480ml) milk (dairy or non-dairy)
- 1/4 cup (60ml) maple syrup (or honey)
- 2 large eggs
- 2 tablespoons (30g) unsalted butter, melted (or coconut oil)
- 1 teaspoon (5ml) vanilla extract
- 1 cup (150g) mixed berries (fresh or frozen - blueberries, raspberries, strawberries)
- 1/2 cup (60g) chopped nuts (walnuts, pecans, almonds)
Instructions:
- Preheat the oven to 375°F (190°C). Grease an 8x8 inch baking dish.
- In a large bowl, combine the oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
- Gently fold in the mixed berries and half of the chopped nuts.
- Pour the mixture into the prepared baking dish.
- Sprinkle the remaining chopped nuts over the top.
- Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set. A toothpick inserted into the center should come out clean.
- Let cool for a few minutes before serving.
