Ingredients:

  • 2 cups (160g) rolled oats (not instant)
  • 1 teaspoon (5ml) baking powder
  • 1/2 teaspoon (2.5ml) ground cinnamon
  • 1/4 teaspoon (1.25ml) salt
  • 2 cups (480ml) milk (dairy or non-dairy)
  • 1/4 cup (60ml) maple syrup (or honey)
  • 2 large eggs
  • 2 tablespoons (30g) unsalted butter, melted (or coconut oil)
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (150g) mixed berries (fresh or frozen - blueberries, raspberries, strawberries)
  • 1/2 cup (60g) chopped nuts (walnuts, pecans, almonds)

Instructions:

  1. Preheat the oven to 375°F (190°C). Grease an 8x8 inch baking dish.
  2. In a large bowl, combine the oats, baking powder, cinnamon, and salt.
  3. In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Gently fold in the mixed berries and half of the chopped nuts.
  6. Pour the mixture into the prepared baking dish.
  7. Sprinkle the remaining chopped nuts over the top.
  8. Bake for 35-40 minutes, or until the top is golden brown and the oatmeal is set. A toothpick inserted into the center should come out clean.
  9. Let cool for a few minutes before serving.
