Ingredients:
- 4 (6 oz) grouper fillets (approx. 170g each)
- 2 tbsp olive oil (30 ml)
- Salt and pepper, to taste
- 1 lemon, zest and juice
- ½ cup unsalted butter, softened (113g)
- 2 tbsp fresh parsley, finely chopped (30g)
- 1 tbsp fresh dill, finely chopped (15g)
- 2 garlic cloves, minced
- 1 tsp paprika (5g)
- Pinch of red pepper flakes (optional)
Instructions:
- Preheat oven: Set oven to 375°F (190°C).
- Prepare the lemon herb butter: In a mixing bowl, combine softened butter, parsley, dill, garlic, paprika, and red pepper flakes. Add lemon juice and zest; mix until well combined.
- Prepare the grouper: Pat grouper fillets dry with paper towels; season both sides with salt, pepper, and a drizzle of olive oil.
- Arrange in baking dish: Place grouper fillets in a baking dish; spread a generous layer of lemon herb butter on top of each fillet.
- Bake: Bake for approximately 20 minutes, or until the fish is opaque and flakes easily with a fork (internal temperature should reach 145°F / 63°C).
- Serve: Garnish with extra fresh herbs and lemon wedges if desired.
