Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp paprika
- ½ tsp cumin
- Salt and pepper, to taste
- 1 cup cooked long-grain rice
- 1 can diced tomatoes (15 oz)
- 3 large bell peppers (red, green, yellow), chopped
- 1 cup shredded cheddar cheese (divided)
- ½ cup beef broth
- 1 tsp Italian seasoning
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, add ground beef, chopped onions, and garlic. Cook until the beef is browned and onions are translucent, about 5-7 minutes. Drain excess fat.
- Stir in chili powder, paprika, cumin, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat.
- In a mixing bowl, combine cooked rice, diced tomatoes, chopped bell peppers, half of the cheese, beef broth, and Italian seasoning. Fold in the cooked beef mixture.
- Pour the mixture into a greased baking dish, spreading evenly.
- Sprinkle the remaining cheese over the top.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes, or until cheese is bubbly and golden.
- Allow to cool for 5 minutes before serving. Enjoy!
