Ingredients:

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper, to taste
  • 1 cup cooked long-grain rice
  • 1 can diced tomatoes (15 oz)
  • 3 large bell peppers (red, green, yellow), chopped
  • 1 cup shredded cheddar cheese (divided)
  • ½ cup beef broth
  • 1 tsp Italian seasoning

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, add ground beef, chopped onions, and garlic. Cook until the beef is browned and onions are translucent, about 5-7 minutes. Drain excess fat.
  3. Stir in chili powder, paprika, cumin, salt, and pepper. Mix well and cook for another 2-3 minutes. Remove from heat.
  4. In a mixing bowl, combine cooked rice, diced tomatoes, chopped bell peppers, half of the cheese, beef broth, and Italian seasoning. Fold in the cooked beef mixture.
  5. Pour the mixture into a greased baking dish, spreading evenly.
  6. Sprinkle the remaining cheese over the top.
  7. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes, or until cheese is bubbly and golden.
  8. Allow to cool for 5 minutes before serving. Enjoy!
