- 1 cup unsalted butter, softened (227 g)
- 1 cup granulated sugar (200 g)
- 2 large eggs
- 1 teaspoon vanilla extract (5 ml)
- 2 cups all-purpose flour (250 g)
- 1 teaspoon baking powder (5 g)
- ¼ teaspoon salt (1 g)
- 1 cup rainbow sprinkles (160 g)
- Food coloring (various colors such as pink, blue, yellow, and green)
- 1 cup cream cheese frosting (240 g; store-bought or homemade)
- Extra sprinkles for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease a 9x13 inch baking pan with non-stick spray or line with parchment paper.
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add eggs and vanilla extract, mixing until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, blending until just combined.
- Divide the dough into separate bowls for each color you wish to create.
- Add a few drops of food coloring to each dough portion, stirring until the color is vivid and even.
- Starting with one color, spread an even layer of dough in the prepared pan.
- Alternate layers with different colors until all the dough is used.
- Press the rainbow sprinkles into the top layer gently.
- Bake in the preheated oven for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for 30 minutes before transferring to a wire rack to cool completely.
- Once cool, top with cream cheese frosting and additional sprinkles if desired.
- Cut into squares or bars and serve.
