Ingredients:
- 3 lb (1.4 kg) whole turkey, thawed and cleaned
- 2 tablespoons (30 ml) olive oil
- 1 teaspoon (5 g) salt
- 1 teaspoon (5 g) black pepper
- 1 teaspoon (5 g) dried thyme
- 1 teaspoon (5 g) rosemary
- 1 cup (240 ml) chicken broth
- 2 large apples, peeled, cored, and sliced (e.g., Honeycrisp or Granny Smith)
- 1 cup (150 g) fresh or frozen mixed berries (e.g., blueberries, raspberries, strawberries)
- 1 tablespoon (15 g) brown sugar
- 1 teaspoon (5 g) ground cinnamon
- 1 tablespoon (15 ml) lemon juice
- Fresh thyme or parsley, for garnish
Instructions:
- Preheat your oven to 375°F (190°C).
- Pat the turkey dry with paper towels and rub with olive oil, salt, pepper, thyme, and rosemary.
- In a large bowl, combine sliced apples, berries, brown sugar, cinnamon, and lemon juice. Toss to coat well.
- Carefully place the apple and berry mixture into the cavity of the turkey.
- Place the turkey breast-side up in the roasting pan and pour chicken broth around it.
- Roast in the preheated oven, basting occasionally, until the turkey reaches an internal temperature of 165°F (74°C) (about 1 hour 15 minutes).
- Remove the turkey from the oven and let it rest for 15 minutes before carving.
- Carve the turkey and serve with the apple and berry delight on the side.
