Ingredients:

  • 3 lb (1.4 kg) whole turkey, thawed and cleaned
  • 2 tablespoons (30 ml) olive oil
  • 1 teaspoon (5 g) salt
  • 1 teaspoon (5 g) black pepper
  • 1 teaspoon (5 g) dried thyme
  • 1 teaspoon (5 g) rosemary
  • 1 cup (240 ml) chicken broth
  • 2 large apples, peeled, cored, and sliced (e.g., Honeycrisp or Granny Smith)
  • 1 cup (150 g) fresh or frozen mixed berries (e.g., blueberries, raspberries, strawberries)
  • 1 tablespoon (15 g) brown sugar
  • 1 teaspoon (5 g) ground cinnamon
  • 1 tablespoon (15 ml) lemon juice
  • Fresh thyme or parsley, for garnish

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. Pat the turkey dry with paper towels and rub with olive oil, salt, pepper, thyme, and rosemary.
  3. In a large bowl, combine sliced apples, berries, brown sugar, cinnamon, and lemon juice. Toss to coat well.
  4. Carefully place the apple and berry mixture into the cavity of the turkey.
  5. Place the turkey breast-side up in the roasting pan and pour chicken broth around it.
  6. Roast in the preheated oven, basting occasionally, until the turkey reaches an internal temperature of 165°F (74°C) (about 1 hour 15 minutes).
  7. Remove the turkey from the oven and let it rest for 15 minutes before carving.
  8. Carve the turkey and serve with the apple and berry delight on the side.
