Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Food coloring (red, blue, green, yellow)
  • 2 cups of your favorite ice cream, softened

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a separate bowl, combine softened butter and sugar until fluffy.
  5. Add the egg and vanilla to the butter mixture, mixing until combined.
  6. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  7. Split the dough into four equal portions.
  8. Add a few drops of food coloring to each portion and knead to achieve desired colors.
  9. Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them 2 inches apart.
  10. Place in the oven and bake for 8 minutes or until edges are lightly golden.
  11. Allow cookies to cool completely on a wire rack.
  12. Take 1 cookie, place a scoop of softened ice cream on the flat side, and top with another cookie. Press gently to spread the ice cream to the edges. Transfer to the freezer to set.
  13. Once frozen, slice in half if desired and enjoy!
