Ingredients:
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- Food coloring (red, blue, green, yellow)
- 2 cups of your favorite ice cream, softened
Instructions:
- Preheat the oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, combine softened butter and sugar until fluffy.
- Add the egg and vanilla to the butter mixture, mixing until combined.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Split the dough into four equal portions.
- Add a few drops of food coloring to each portion and knead to achieve desired colors.
- Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them 2 inches apart.
- Place in the oven and bake for 8 minutes or until edges are lightly golden.
- Allow cookies to cool completely on a wire rack.
- Take 1 cookie, place a scoop of softened ice cream on the flat side, and top with another cookie. Press gently to spread the ice cream to the edges. Transfer to the freezer to set.
- Once frozen, slice in half if desired and enjoy!
