Ingredients:
- 1 cup (225g) unsalted butter, softened
- 1 cup (200g) brown sugar, packed
- 1/2 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 2 cups (180g) rolled oats
- 1 1/2 cups (190g) all-purpose flour
- 1/2 teaspoon (2g) baking soda
- 1/2 teaspoon (2g) salt
- 1 cup (170g) semisweet chocolate chunks
- 1/2 cup (75g) chopped nuts (optional)
- 1/3 cup (50g) dried fruit (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together rolled oats, flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Gently fold in chocolate chunks (and optional nuts or dried fruit if using).
- Using a cookie scoop or spoon, drop dough onto prepared baking sheets, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are golden brown but the center remains soft.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
