Ingredients:

  • 1 cup (225g) unsalted butter, softened
  • 1 cup (200g) brown sugar, packed
  • 1/2 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon (5ml) vanilla extract
  • 2 cups (180g) rolled oats
  • 1 1/2 cups (190g) all-purpose flour
  • 1/2 teaspoon (2g) baking soda
  • 1/2 teaspoon (2g) salt
  • 1 cup (170g) semisweet chocolate chunks
  • 1/2 cup (75g) chopped nuts (optional)
  • 1/3 cup (50g) dried fruit (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together rolled oats, flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in chocolate chunks (and optional nuts or dried fruit if using).
  7. Using a cookie scoop or spoon, drop dough onto prepared baking sheets, leaving space between each cookie.
  8. Bake for 12-15 minutes, or until the edges are golden brown but the center remains soft.
  9. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a cooling rack.
