Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 cup (120ml) unsalted butter, softened
  • 1 cup (240ml) plain kefir
  • 3 large eggs
  • 1 teaspoon (5g) baking powder
  • 1 teaspoon (6g) baking soda
  • 1/2 teaspoon (2g) salt
  • Zest of 1 lemon
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (120g) powdered sugar
  • 2-3 tablespoons (30-45ml) fresh lemon juice
  • Zest of 1 lemon (for garnish)

Instructions:

  1. Preheat the oven to 350°F (175°C). Grease and flour the baking sheet.
  2. In a mixing bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs, one at a time, mixing until fully incorporated after each addition.
  4. Stir in kefir, lemon zest, and vanilla extract until combined.
  5. In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Pour the batter into the prepared baking sheet, smoothing the top.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Allow to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  10. For the glaze, whisk powdered sugar and lemon juice until smooth; drizzle over the cooled cake. Garnish with lemon zest.
