Ingredients:
- 2 cups (250g) all-purpose flour
- 1 cup (200g) granulated sugar
- 1/2 cup (120ml) unsalted butter, softened
- 1 cup (240ml) plain kefir
- 3 large eggs
- 1 teaspoon (5g) baking powder
- 1 teaspoon (6g) baking soda
- 1/2 teaspoon (2g) salt
- Zest of 1 lemon
- 1 teaspoon (5ml) vanilla extract
- 1 cup (120g) powdered sugar
- 2-3 tablespoons (30-45ml) fresh lemon juice
- Zest of 1 lemon (for garnish)
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour the baking sheet.
- In a mixing bowl, cream together butter and sugar until light and fluffy.
- Add eggs, one at a time, mixing until fully incorporated after each addition.
- Stir in kefir, lemon zest, and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking sheet, smoothing the top.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
- For the glaze, whisk powdered sugar and lemon juice until smooth; drizzle over the cooled cake. Garnish with lemon zest.
