Ingredients:

  • 3 cups (360g) all-purpose flour
  • 2 ½ cups (500g) granulated sugar
  • 1 ½ cups (360ml) whole milk, room temperature
  • 1 cup (230g) unsalted butter, softened
  • 4 large eggs, room temperature
  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (5g) vanilla extract
  • ½ teaspoon (2.5g) salt
  • Food coloring (pink and blue)
  • 1 cup (230g) unsalted butter, softened (for frosting)
  • 4 cups (480g) powdered sugar, sifted
  • ¼ cup (60ml) whole milk (for frosting)
  • 1 teaspoon (5g) vanilla extract (for frosting)
  • Pink or blue gel food coloring (for frosting)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the cake pans and line the bottom with parchment paper.
  3. In a bowl, whisk together flour, baking powder, and salt.
  4. In a large mixing bowl, beat the softened butter and sugar until light and fluffy.
  5. Mix in the eggs, one at a time, and then add the vanilla extract.
  6. Gradually add the dry ingredients and milk to the creamed mixture, alternating between the two.
  7. Divide the batter into two bowls and color one bowl pink and the other blue using food coloring.
  8. Pour each colored batter into its own prepared pan and bake for 30 minutes or until a toothpick inserted comes out clean.
  9. Let the cakes cool in the pans for 10 minutes, then turn them out onto wire racks to cool completely.
  10. Beat the butter for the frosting until creamy, gradually add powdered sugar, milk, and vanilla, and beat until smooth.
  11. Place one blue layer on the serving platter and spread frosting on top. Add the pink layer next and frost. Repeat with the remaining layer.
  12. Fill the center of the cake with the remaining pink or blue frosting for a surprise effect when sliced.
