Ingredients:

  • 1 ½ cups (180g) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 cup (240ml) plain kefir
  • 1 tsp vanilla extract
  • 1 cup (120g) powdered sugar
  • 2-3 tbsp (30-45ml) milk or kefir
  • Zest of 1 lemon (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. Grease the baking sheet or line with parchment paper.
  3. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in kefir and vanilla.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Pour the batter into the prepared baking sheet and smooth the top with a spatula.
  7. Bake for 25 minutes, until a toothpick inserted into the center comes out clean.
  8. While the cake cools, prepare the glaze by mixing powdered sugar with milk or kefir until smooth.
  9. Optional: Add lemon zest to the glaze for extra flavor.
  10. Drizzle the glaze over the cooled cake and allow to set before serving.
