Ingredients:
- 1 ½ cups (180g) all-purpose flour
- 1 ½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (113g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 cup (240ml) plain kefir
- 1 tsp vanilla extract
- 1 cup (120g) powdered sugar
- 2-3 tbsp (30-45ml) milk or kefir
- Zest of 1 lemon (optional)
Instructions:
- Preheat the oven to 350°F (175°C).
- Grease the baking sheet or line with parchment paper.
- In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then mix in kefir and vanilla.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Pour the batter into the prepared baking sheet and smooth the top with a spatula.
- Bake for 25 minutes, until a toothpick inserted into the center comes out clean.
- While the cake cools, prepare the glaze by mixing powdered sugar with milk or kefir until smooth.
- Optional: Add lemon zest to the glaze for extra flavor.
- Drizzle the glaze over the cooled cake and allow to set before serving.
