Ingredients:

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs or 680 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon garlic powder (5 g)
  • 1 teaspoon onion powder (5 g)
  • 1 teaspoon dried thyme (1 g)
  • 1 teaspoon dried rosemary (1 g)
  • ½ teaspoon salt (3 g)
  • ¼ teaspoon black pepper (1 g)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Pat chicken thighs dry with paper towels.
  3. In a mixing bowl, combine olive oil, garlic powder, onion powder, thyme, rosemary, salt, and pepper. Mix until smooth.
  4. Rub the herb mixture all over the chicken thighs, ensuring even coverage.
  5. Place chicken thighs skin-side up in the baking dish, leaving space between them.
  6. Bake in the preheated oven for 40-50 minutes or until the skin is golden brown and the internal temperature reaches 165°F (74°C).
  7. Remove from the oven and let the chicken rest for 5 minutes before serving.
  8. Garnish with chopped parsley and serve hot.
