Ingredients:

  • 12 oz (340 g) penne or fusilli pasta
  • 8 oz (225 g) Boursin cheese
  • 1 cup (240 ml) heavy cream
  • 1 cup (100 g) grated mozzarella cheese
  • 1 cup (90 g) fresh spinach, chopped
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/2 cup (75 g) grated parmesan cheese
  • 1 tsp (5 g) garlic powder
  • 1/2 tsp (2 g) salt
  • 1/4 tsp (1 g) black pepper
  • 1/4 cup (15 g) breadcrumbs
  • 1 tbsp (15 ml) olive oil
  • Fresh basil leaves for garnish (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Boil a large pot of salted water, add pasta, and cook until al dente (about 8 minutes). Drain and return to the pot.
  3. In a large bowl, combine Boursin cheese, heavy cream, garlic powder, salt, and pepper. Whisk until smooth.
  4. Add the chopped spinach, cherry tomatoes, and cooked pasta to the bowl. Mix until everything is well coated.
  5. Pour the pasta mixture into the prepared baking dish and spread evenly.
  6. Top with grated mozzarella and parmesan cheese.
  7. In a small bowl, mix breadcrumbs with olive oil. Sprinkle the mixture over the cheese layer.
  8. Place in the oven and bake for 15-20 minutes or until the top is golden brown and bubbly.
  9. Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired. Serve warm.
