Ingredients:
- 12 oz (340 g) penne or fusilli pasta
- 8 oz (225 g) Boursin cheese
- 1 cup (240 ml) heavy cream
- 1 cup (100 g) grated mozzarella cheese
- 1 cup (90 g) fresh spinach, chopped
- 1 cup (150 g) cherry tomatoes, halved
- 1/2 cup (75 g) grated parmesan cheese
- 1 tsp (5 g) garlic powder
- 1/2 tsp (2 g) salt
- 1/4 tsp (1 g) black pepper
- 1/4 cup (15 g) breadcrumbs
- 1 tbsp (15 ml) olive oil
- Fresh basil leaves for garnish (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Boil a large pot of salted water, add pasta, and cook until al dente (about 8 minutes). Drain and return to the pot.
- In a large bowl, combine Boursin cheese, heavy cream, garlic powder, salt, and pepper. Whisk until smooth.
- Add the chopped spinach, cherry tomatoes, and cooked pasta to the bowl. Mix until everything is well coated.
- Pour the pasta mixture into the prepared baking dish and spread evenly.
- Top with grated mozzarella and parmesan cheese.
- In a small bowl, mix breadcrumbs with olive oil. Sprinkle the mixture over the cheese layer.
- Place in the oven and bake for 15-20 minutes or until the top is golden brown and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh basil if desired. Serve warm.
