Ingredients:

  • 2 cups (300g) fresh or frozen sweet corn
  • 1 cup (240ml) whole milk
  • 1/2 cup (120ml) heavy cream
  • 3 large eggs
  • 1/4 cup (50g) granulated sugar
  • 1/4 cup (60g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 tablespoon all-purpose flour
  • 1/2 cup (60g) shredded cheddar cheese
  • Fresh chives for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the baking dish with non-stick spray or butter.
  3. In a mixing bowl, combine corn, milk, cream, and eggs.
  4. Whisk in sugar, melted butter, vanilla extract, and salt until well combined.
  5. Gradually stir in the flour to thicken the mixture.
  6. Pour the corn pudding mixture into the greased baking dish.
  7. Bake in the preheated oven for 40-45 minutes or until the top is golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before cutting into squares. Garnish with cheese and chives if desired.
