Ingredients:
- 2 cups (300g) fresh or frozen sweet corn
- 1 cup (240ml) whole milk
- 1/2 cup (120ml) heavy cream
- 3 large eggs
- 1/4 cup (50g) granulated sugar
- 1/4 cup (60g) unsalted butter, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 tablespoon all-purpose flour
- 1/2 cup (60g) shredded cheddar cheese
- Fresh chives for garnish
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease the baking dish with non-stick spray or butter.
- In a mixing bowl, combine corn, milk, cream, and eggs.
- Whisk in sugar, melted butter, vanilla extract, and salt until well combined.
- Gradually stir in the flour to thicken the mixture.
- Pour the corn pudding mixture into the greased baking dish.
- Bake in the preheated oven for 40-45 minutes or until the top is golden brown and a toothpick comes out clean.
- Allow to cool slightly before cutting into squares. Garnish with cheese and chives if desired.
