Ingredients:
- 3 ripe bananas (about 1 cup pureed, or 750g)
- 1/3 cup (75g) unsalted butter, melted
- 3/4 cup (150g) granulated sugar
- 1 large egg, beaten (about 50g)
- 1 teaspoon vanilla extract (5ml)
- 1 teaspoon baking soda (5g)
- Pinch of salt
- 1 cup (125g) all-purpose flour
- 1/2 teaspoon ground cinnamon (optional, 2g)
Instructions:
- Preheat your oven to 350°F (175°C).
- Grease and flour the loaf pan, or line it with parchment paper.
- In a mixing bowl, mash the ripe bananas with a fork until smooth.
- Mix in the melted butter, sugar, beaten egg, and vanilla extract until well blended.
- Sprinkle the baking soda and salt over the mixture. Stir to combine.
- Gradually add the flour to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in the ground cinnamon if desired.
- Pour the batter into the prepared loaf pan.
- Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
