Ingredients:

  • 3 ripe bananas (about 1 cup pureed, or 750g)
  • 1/3 cup (75g) unsalted butter, melted
  • 3/4 cup (150g) granulated sugar
  • 1 large egg, beaten (about 50g)
  • 1 teaspoon vanilla extract (5ml)
  • 1 teaspoon baking soda (5g)
  • Pinch of salt
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional, 2g)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease and flour the loaf pan, or line it with parchment paper.
  3. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  4. Mix in the melted butter, sugar, beaten egg, and vanilla extract until well blended.
  5. Sprinkle the baking soda and salt over the mixture. Stir to combine.
  6. Gradually add the flour to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in the ground cinnamon if desired.
  8. Pour the batter into the prepared loaf pan.
  9. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  10. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
