Ingredients:
- 1.25 lbs Ground Turkey (93% lean)
- 1/2 cup Panko breadcrumbs
- 1/4 cup Whole milk
- 1 Large egg, lightly beaten
- 1/4 cup Yellow onion, finely minced
- 2 cloves Garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp Smoked paprika
- 1/2 tsp Salt
- 1/4 tsp Black pepper
- 5 strips Thin-cut bacon, halved
- 1/2 cup Low-sugar BBQ sauce
- 1 tbsp Apple cider vinegar
- 1 tsp Dijon mustard
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine Panko breadcrumbs and milk. Let sit for 5 minutes to form a panade.
- Add ground turkey, beaten egg, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper to the panade. Mix by hand until just combined; do not overwork.
- Divide the mixture into 8 equal portions and shape into small oval loaves. Place them on the prepared baking sheet.
- Top each petite loaf with a half-slice of bacon, tucking the ends underneath. Bake for 15 minutes.
- Whisk together BBQ sauce, apple cider vinegar, and Dijon mustard. Brush the glaze generously over the bacon-topped loaves.
- Return to the oven and bake for an additional 10 minutes or until the internal temperature reaches 165°F (74°C).
