Ingredients:

  • 1.25 lbs Ground Turkey (93% lean)
  • 1/2 cup Panko breadcrumbs
  • 1/4 cup Whole milk
  • 1 Large egg, lightly beaten
  • 1/4 cup Yellow onion, finely minced
  • 2 cloves Garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp Smoked paprika
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 5 strips Thin-cut bacon, halved
  • 1/2 cup Low-sugar BBQ sauce
  • 1 tbsp Apple cider vinegar
  • 1 tsp Dijon mustard

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine Panko breadcrumbs and milk. Let sit for 5 minutes to form a panade.
  3. Add ground turkey, beaten egg, onion, garlic, Worcestershire sauce, smoked paprika, salt, and pepper to the panade. Mix by hand until just combined; do not overwork.
  4. Divide the mixture into 8 equal portions and shape into small oval loaves. Place them on the prepared baking sheet.
  5. Top each petite loaf with a half-slice of bacon, tucking the ends underneath. Bake for 15 minutes.
  6. Whisk together BBQ sauce, apple cider vinegar, and Dijon mustard. Brush the glaze generously over the bacon-topped loaves.
  7. Return to the oven and bake for an additional 10 minutes or until the internal temperature reaches 165°F (74°C).
