Ingredients:

  • 6 large fresh jalapeños
  • 4 oz Neufchâtel cheese, softened
  • 1/2 cup extra-sharp cheddar cheese, finely shredded
  • 1/2 tsp garlic powder
  • 1/4 tsp smoked paprika
  • 1/8 tsp onion powder
  • 1 tbsp fresh chives, minced
  • 6 slices center-cut bacon, halved crosswise
  • 2 tbsp panko breadcrumbs

Instructions:

  1. Wear gloves to slice each jalapeño in half lengthwise. Use a small spoon to scrape out the seeds and white membranes until the interior is smooth.
  2. In a medium bowl, combine softened Neufchâtel cheese, shredded cheddar, garlic powder, smoked paprika, and onion powder. Whip with a fork until the mixture is light and aerated, then fold in the minced chives.
  3. Using a small spatula or spoon, fill each jalapeño half with the cheese mixture, leveling it flush with the edges.
  4. Wrap a half-slice of center-cut bacon snugly around the middle of each stuffed pepper, ensuring the ends meet on the bottom. Sprinkle with panko breadcrumbs if desired.
  5. Place the poppers in the air fryer basket in a single layer. Air fry at 350°F (180°C) for 10-12 minutes until the bacon is crispy and the peppers are tender-crisp.
