Ingredients:

  • 1 lb (450 g) Store-bought or prepared Pizza Dough, at room temperature
  • 2 Tbsp (30 ml) Olive Oil, plus extra for brushing
  • 1 Tbsp (15 g) Fine Semolina or Cornmeal (for dusting)
  • ½ cup (120 g) Crème Fraîche (or full-fat sour cream)
  • 1 medium clove Garlic, minced finely
  • ½ tsp (2.5 ml) Worcestershire Sauce (optional)
  • ¼ tsp (1 g) Black Pepper
  • Pinch of Sea Salt
  • 8 slices (approx. 150 g) Smoked Streaky Bacon, cut into 1-inch pieces
  • 5 large Eggs
  • 1 Tbsp (15 ml) Milk or Cream
  • 1 cup (120 g) Shredded Low-Moisture Mozzarella
  • ½ cup (60 g) Shredded Mature Cheddar Cheese (or Monterey Jack)
  • 1 Tbsp (5 g) Fresh Chives, chopped (for garnish)

Instructions:

  1. Preheat Oven: Place the pizza stone (if using) into the oven and preheat to 475°F (245°C) for at least 30 minutes. If using a baking sheet, preheat the oven to 450°F (230°C).
  2. Cook the Bacon: Render the bacon pieces in a dry skillet over medium heat until crispy. Remove bacon with a slotted spoon and drain thoroughly on paper towels.
  3. Prepare the Eggs: Whisk the eggs with the milk/cream, a pinch of salt, and pepper. Use the same skillet (drained of fat), and gently scramble the eggs until they are par-cooked and still slightly wet and soft. Remove immediately and set aside.
  4. Mix the Base Spread: In a small bowl, combine the crème fraîche, minced garlic, Worcestershire sauce (if using), pepper, and salt. Mix well.
  5. Combine Cheese: Mix the shredded mozzarella and cheddar in a separate bowl.
  6. Shape the Dough: Dust your workspace and pizza peel (or baking sheet) with semolina or cornmeal. Stretch the room-temperature dough into a rough 12-14 inch circle or oval. Brush the edges lightly with olive oil.
  7. Apply the Spread: Spread the creamy base mixture evenly over the pizza, leaving a 1-inch border for the crust.
  8. Layer the Toppings (The Barrier Layer): Sprinkle about two-thirds (⅔) of the cheese mixture directly over the crème fraîche base. This prevents the crust from getting soggy.
  9. Add Protein and Egg: Distribute the crispy bacon pieces and the gently scrambled eggs evenly across the cheese layer.
  10. Final Cheese Layer: Sprinkle the remaining one-third (⅓) of the cheese over the eggs and bacon.
  11. Bake: Carefully slide the pizza onto the preheated stone or place the baking sheet into the oven. Bake for 12 to 15 minutes, rotating once halfway through, until the crust is golden brown and the cheese is melted and bubbling.
  12. Rest, Slice, and Serve: Remove the pizza from the oven. Let it rest for 2-3 minutes. Sprinkle generously with chopped fresh chives, slice into 6 portions, and serve immediately.
