Ingredients:

  • 12 ounces fresh mozzarella balls (bocconcini)
  • 12 cherry tomatoes
  • 12 fresh basil leaves
  • 2 tablespoons extra-virgin olive oil
  • Salt and black pepper, to taste
  • 1/2 cup balsamic vinegar
  • 1 tablespoon brown sugar (optional for sweetness)

Instructions:

  1. Prepare the Balsamic Reduction: In a small saucepan, combine balsamic vinegar and brown sugar (if using). Bring to a simmer over medium heat, stirring occasionally. Reduce heat and let it simmer for 10-15 minutes, or until thickened and reduced by half. Remove from heat and allow to cool slightly until drizzling consistency.
  2. Assemble the Skewers: Using a skewer, thread one mozzarella ball onto the stick. Follow with a cherry tomato. Next, add a fresh basil leaf (folded if large). Repeat for additional skewers until all ingredients are used.
  3. Finish and Serve: Drizzle the skewers with olive oil and season with salt and pepper. Drizzle cooled balsamic reduction over the skewers before serving. Arrange on a platter and enjoy!
