Ingredients:

  • 2 medium apples (such as Gala, Fuji, or Honeycrisp), peeled, cored, and finely diced (300g)
  • 1 cup walnuts, toasted and finely chopped (100g)
  • ½ cup sweet red wine (such as Manischewitz), plus more as needed (120 ml)
  • 2 tablespoons honey (30 ml)
  • 1 teaspoon ground cinnamon (5g)
  • ½ teaspoon ground ginger (2g)
  • ⅛ teaspoon ground cloves (pinch)
  • 1 tablespoon lemon juice (15 ml)
  • Pinch of kosher salt

Instructions:

  1. Toast walnuts in a dry skillet over medium heat or in a toaster oven until fragrant and lightly browned. Be careful not to burn them! Let cool slightly.
  2. Peel, core, and dice the apples into small, even pieces. Toss immediately with lemon juice to prevent browning.
  3. Finely chop the toasted walnuts (or untoasted if preferred).
  4. In a large mixing bowl, combine the diced apples, chopped walnuts, sweet red wine, honey, cinnamon, ginger, cloves, and salt.
  5. Stir everything together thoroughly until well combined. Add more wine if needed to reach your desired consistency. You want it to be moist but not soupy.
  6. Taste and adjust seasoning, adding more honey for sweetness, spices for warmth, or wine for moisture.
  7. For best flavor, cover and chill for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
