Ingredients:
- 2 medium apples (such as Gala, Fuji, or Honeycrisp), peeled, cored, and finely diced (300g)
- 1 cup walnuts, toasted and finely chopped (100g)
- ½ cup sweet red wine (such as Manischewitz), plus more as needed (120 ml)
- 2 tablespoons honey (30 ml)
- 1 teaspoon ground cinnamon (5g)
- ½ teaspoon ground ginger (2g)
- ⅛ teaspoon ground cloves (pinch)
- 1 tablespoon lemon juice (15 ml)
- Pinch of kosher salt
Instructions:
- Toast walnuts in a dry skillet over medium heat or in a toaster oven until fragrant and lightly browned. Be careful not to burn them! Let cool slightly.
- Peel, core, and dice the apples into small, even pieces. Toss immediately with lemon juice to prevent browning.
- Finely chop the toasted walnuts (or untoasted if preferred).
- In a large mixing bowl, combine the diced apples, chopped walnuts, sweet red wine, honey, cinnamon, ginger, cloves, and salt.
- Stir everything together thoroughly until well combined. Add more wine if needed to reach your desired consistency. You want it to be moist but not soupy.
- Taste and adjust seasoning, adding more honey for sweetness, spices for warmth, or wine for moisture.
- For best flavor, cover and chill for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature.
