Ingredients:
- 2 Large Granny Smith or Honeycrisp Apples, chilled
- 1 tbsp Lemon juice
- 2 cups Cold water
- 1/2 cup Creamy Peanut Butter
- 1/2 cup Honey-oat granola
- 1 tsp Chia seeds
- 1 pinch Ground cinnamon
Instructions:
- Wash and dry apples thoroughly. Slice horizontally into 1/2-inch thick rounds. Use an apple corer or small round mold to remove the center seeds from each slice, creating a donut shape.
- Mix lemon juice and cold water. Dip the apple rings into the acidulated water for 30 seconds to prevent browning. Remove and pat completely dry with paper towels.
- Using an offset spatula or butter knife, spread a generous, even layer of creamy peanut butter onto the top surface of each dried apple ring.
- Press the honey-oat granola firmly into the peanut butter layer while it is still tacky. Sprinkle with chia seeds and a light dusting of cinnamon.
